فعالیت آنتیاکسیدانی سیب "رد دلیشز" تحت محلولپاشی قبل از برداشت اسیدفرولیک و نانوکیتوسان

چکیده
سیب (Malus domestica ) بهدلیل محتوای بالای ترکیبات فنولی و ظرفیت آنتیاکسیدانی، اهمیت تغذیهای بالایی دارد. این پژوهش تأثیر کاربرد قبل از برداشت فرولیکاسید و نانوکیتوسان را بر کیفیت سیب بررسی کرد. آزمایش بهصورت فاکتوریل در قالب طرح بلوکهای کامل تصادفی با چهار تکرار انجام شد. تیمارها شامل نانوکیتوسان (0، 5، 10میلیلیتر در لیتر) و فرولیک اسید (0، 0.5، 1میلیمولار) بود. نتایج نشان داد که بالاترین غلظتهای نانوکیتوسان (10میلیلیتر در لیتر) و فرولیک اسید (یک میلیمولار) موجب افزایش معنیدار فنولکل، فلاونوئیدکل و فعالیت آنتیاکسیدانی براساس آزمون DPPH شدند. در مقابل، فعالیت آنزیم پلیفنولاکسیداز با افزایش غلظت تیمارها کاهش یافت و کمترین مقدار در تیمار ترکیبی نانوکیتوسان (10میلیلیتر در لیتر) و فرولیکاسید (0.5 میلیمولار) مشاهده شد. بیشترین فعالیت کاتالاز در تیمار فرولیکاسید (0.5 میلیمولار) بدون نانوکیتوسان ثبت شد، درحالیکه کمترین فعالیت این آنزیم در تیمار ترکیبی نانوکیتوسان (10میلیلیتر در لیتر) و فرولیک اسید (یک میلیمولار) مشاهده شد. با افزایش غلظت فرولیکاسید، مقدار گالیکاسید کاهش و کلروژنیکاسید افزایش یافت، درحالیکه نانوکیتوسان باعث افزایش گالیکاسید و تغییرات مختلف در کافئیکاسید شد. همچنین، بیشترین مقدار آپیژنین در ترکیب نانوکیتوسان 10 میلیلیتر در لیتر و فرولیکاسید یک میلیمولار مشاهده شد. استفاده همزمان از نانوکیتوسان و فرولیکاسید، بهویژه در باغهای ارگانیک، روشی مؤثر برای بهبود کیفیت تغذیهای سیب و افزایش ارزش بازارپسندی آن است.
